This is a great side dish with its favorite Mexican recipes, which is so fresh and lively. It is also ideal for preparing your weekly meal. So simple and so tasty!

  • Rice: I make this recipe with long grain rice like Basmati rice.
  • Broth or water: Cook the rice. I like to use chicken broth or vegetable supply for additional taste, but water works well.
  • Butter: For a rich taste. You can use salted or unsalted. Simply adjust the amount of salt added.
  • Garlic: Use freshly chopped garlic for the best taste.
  • Lime: We use both the shell and the lime juice for a really fresh and cingered taste.
  • Coriander: Fresh coriander adds a great herby freshness. If you don’t like a coriander, you can replace it with parsley.

How to make coriander lime rice

  • Bring water or chicken broth into a medium -sized pot on the stove to cook, add rice, stir, cover and reduce the heat to low. Simmer for 15 minutes until the water is absorbed and the rice is tender.
  • Take the pot from the stove (keep it covered) and let it sit for 10 minutes.
  • Rice with a fork fluff, the butter, the minced meat garlic, the lime juice, the lime shell, the chopped coriander and the salt add. Throw everything together and serve immediately!

What is the best rice?

I like to make this recipe with long-grained white rice like Jasmine or Basmati rice. I think it really makes the aromas of the coriander and lime. You can make this with wild or brown rice if you prefer it, simply follow the package instructions, as a longer cooking time is required for this.
