Every summer, when our garden is overcrowded with fresh cucumbers, this simple cucumber salad is regularly on our table. It is one of my summer pages because it throws together so quickly and remains crisp and refreshing. Over the years I have optimized this recipe to do it right – simply, fresh and full of taste!
It is the perfect side dish for summer chefouts, BBQs in the back yard, family picnic or a light, refreshing lunch.
